Preheat the oven to 350 degrees F (177 degrees C).

Heat the olive oil in alarge skillet. Add chopped onion and sauté for5-6 minutes, until translucent.

Add minced garlic and stir for1 minute, until fragrant.

Add the spinach and stir until soft, about2 minutes. Remove from heat.

In a large bowl, whisk the eggs. Add the heavy cream, salt, and pepper, and baking powder (if using). Whisk to combine.

Stir in the spinach mixture from the skillet and the shredded cheese.

Pour the egg mixture into a 9’’ roundpie panorbaking dish. Bake the quiche for30-35 minutes, until set.
